AROMA: Blackberries, blackcurrants, black pepper and oak
Pacific Gem was most commonly used as a bittering hop but because of its high cohumulone content it gives you a pretty harsh bite so more and more people start to use it for late additions as well.
At early additions you get a aggressive bitterness that works well in big beers like IIPA and imperial stout but also in a international lager. In later additions you get blackberry, strawberry, some citrus and oak that fit darker beers perfect but at the same time you can use smaller quantities of Pacific Gem in any kind of beer that would benefit of its characteristics.
